Elevation: 1800-2200M
Varietal: Caturra, Castillo, Colombia
Fermented: 40-70 hrs
Process: Washed & sun dried for 25-30 days
The harvesting is done by hand and a little later as normal so that the coffee cherries can reach a greater degree of maturity. After the coffee cherries are left to soak, they go through the traditional pulping process.
Fermentation lasts 40 to 70 hours and is carried out in small batches in order to avoid an increase in temperature. Once washed, the cherries are dried in the sun for 25 to 30 days.
Outstanding aroma, sweet, floral, pear, a beautiful bright balanced acidity, long finish, excellent flavour layers.
This high elevation organic coffee is super clean and beautifully balanced. Roasted for drip/pourover/aeropress but we've pulled some terrific modern espresso shots so good for that too.
Sold in 340g bags.

This is a nice very approachable coffee. Good way to introduce someone new to lighter roasts. Not too funky or fruity, good clarity.
